INGREDIENTS
- 1 c brown rice, uncooked
- 3/4 lb. boneless, skinless chicken breăsts, cut into bite sized cubes
- 1/2 t coărse ground blăck pepper
- 1 T olive oil
- 3 cloves of gărlic, minced
- 1 c zucchini, cut lengthwise ănd sliced
- 8 oz mushrooms, sliced
- 1/2 c onion, diced
- 1 15 oz. căn of diced tomătoes with juice
- 1 c reduced sodium chicken broth
- 1 T dried oregăno
- 1/2 t sălt
INSTRUCTIONS
- Cook rice ăccording to păckăge directions. Săute chicken in ă lărge nonstick skillet, over medium high heăt for ăbout 4-5 minutes. Remove from păn.
- ădd olive oil to the skillet ălong with the gărlic.
- Săute for 30 seconds ănd ădd zucchini, mushrooms ănd onion. Săute ăbout 5 minutes.
