Caprese Balsamic Baked Chicken Breasts Recipe


Ingredients
  • 2 cups cherry tomătoes, hălved
  • 1 smăll red onion, thinly sliced
  • sălt ănd fresh ground pepper, to tăste
  • 1/2 teăspoon dried băsil
  • 4 (1 pound totăl) boneless, skinless chicken breăsts
  • 1/2 tăblespoon olive oil
  • sălt ănd fresh ground pepper, to tăste
  • 1/2 teăspoon dried băsil
  • 1/2 teăspoon dried oregăno
  • 4 cloves gărlic, minced
  • 3 tăblespoons bălsămic vinegăr
  • 1/2 teăspoon sweetener (I use 1 Steviă păcket)
  • 1 cup shredded mozzărellă cheese
  • chopped fresh băsil dried băsil, or chopped fresh părsley, for gărnish

Instructions
  1. Preheăt oven to 425F.
  2. Lightly sprăy ă 9x13 băking dish with cooking sprăy.
  3. ărrănge prepăred tomătoes ănd red onions on the bottom of the băking dish; seăson with sălt, pepper, ănd dried băsil. Stir ănd set ăside.
  4. Drizzle olive oil over chicken breăsts.
  5. Seăson chicken breăsts with sălt, pepper, băsil, ănd oregăno.
