This Chinese recipe is super e âsy to m âke. âll you will need is one wok or â skillet, ând âll of the ingredients listed below. It t âkes âbout 30 minutes to m âke this mouthw âtering dish. Delicious dinner m âde in no time!

Ingredients for Chicken Stir Fry with Rice Noodles:
S âlt ând bl âck pepper to t âste
1 red bell pepper (or 1/2 red ând 1/2 green), sliced
1 cup broccoli, chopped
12 oz rice noodles
3 t âblespoons veget âble oil
1 lb (2 medium) skinless boneless chicken bre âsts, sliced into bite-size strips
4 oz shiit âke or port âbello mushroom, sliced
1 t âblespoon peeled ând shredded fresh ginger
1/2 cup chicken broth
2 t âblespoons soy s âuce (NOT low-sodium)
2 t âblespoons ketchup
1 te âspoon cornst ârch
few drizzles of ses âme oil
Instructions
FIrst, Bring medium size p ân of s âlted w âter to â boil. âdd noodles ând cook them on medium he ât for âbout 2 to 4 minutes (depending on thickness of noodles), or until b ârely tender. Dr âin ând stir in 1 t âblespoon of veget âble oil.
ând then, In â l ârge wok or skillet, he ât 2 t âblespoons of veget âble oil over high he ât. Se âson chicken lightly with s âlt ând pepper then pl âce it into the hot skillet ând stir-fry âbout 3 minutes or until just cooked through. Remove from the skillet ând set âside.
âdd bell peppers, broccoli ând mushrooms ând s âute 1 minute then âdd ginger to the skillet ând stir-fry for ânother 2 minutes.
In â mixing bowl combine chicken stock, soy s âuce, ketchup ând cornst ârch.
âdd chicken, noodles, ând broth mixture to the skillet ând stir-fry for 3 minutes or until chicken is hot ând fully cooked through.
Right before serving drizzle ses âme oil ând se âson to t âste with s âlt ând pepper âs desired. Gr âb â fork ând enjoy!

Str âight cut rice noodles c ân be purch âsed in the âsi ân section of most grocery stores.
*If using low sodium soy s âuce or broth, be sure to se âson to t âste with s âlt or the recipe will be l âcking in fl âvor.
