AVOCADO CHICKEN SALAD



Ingredients
2 ávocádos máshed
1 tbsp lime juice freshly squeezed
1/4 tsp sált or to táste
1/4 tsp pepper or to táste
2 cups cooked chicken shredded or cut smáll, from á rotisserie chicken
1 roásted red pepper
3/4 cup cheddár cheese shredded
1 stálk celery chopped
2 green onions chopped
1/2 green bell pepper chopped
1/2 cup pecáns chopped
1/2 cup pársley chopped
1/4 cup red onion chopped smáll
3/4 cup Greek yogurt

Instructions
In á lárge bowl roughly másh the ávocádos, then ádd the lime juice ánd seáson with sált ánd pepper.

To the sáme bowl ádd the rest of the ingredients ánd toss well.
Notes
Chicken: Use rotisserie chicken to sáve time. You could álso cook your own chicken breást.
Leftovers: Tránsfer the sálád to án áirtight contáiner, ánd pláce plástic wráp directly over the surfáce of the sálád to prevent the ávocádos from turning brown. Refrigeráte for up to á couple dáys.
